How to make beef curry

Ingredients:-

Beef - 1.5 kg

Onion - 4 nos

Greenchillies - 6 nos

Ginger Crushed Garlic - 3 teaspoon

Small Onions - 10 nos

Coconut pieces - 1/4 cup

Curry Leaves - Enough

Turmeric Powder - 1 teaspoon

Kashmiri Chilli Powder - 4 table spoon

Coriander Powder - 4 table spoon

Garam Masala Powder - 2 teaspoon

Pepper Powder - 1 Tablespoon

Mustard - 1 Table spoon

Coconut Oil - 4 Tablespoon

Water - 1 Cup

Salt - to taste

How to Prepare

  • Cut the beef into small pieces and wash

  • Heat a pressure cooker and pour 3 tablespoons of coconut oil. Add mustard seeds and stir well. Add cocount husks. Add 1/4 teaspoon turmeric powder and some salt and fry the coconut. Add small onion and greenchillies and fry.

  • Then add onion and curry leaves and fry. You can also add ginger and garlic paste.

  • Add Turmeric powder, chilli Powder, Coriander Powder and Garam Masala Powder and fry well. 

  • Then add Beef and enough salt and mix well. Fry on medium heat for 5 minutes. Add water, stir close the pressure cooker, blow 4 whistles and cook the beef. Heat a saucepan and pour 1 tablespoon coconut oil. Add pepper powder and curry leaves and fry. Then add this to the beef curry and mix well.

Ready to eat tasty beef curry with rice and chappathy and porotta.

Ingredients

Bitter Gourd - 1 Large

Raw Mangoe - 1 Small

Green Chillies - 3 No

Salt - To taste

Turmeric Powder - 1 Teaspoon

Chilli Powder - 1 Teaspoon

Coriander Powder - 1/2 Teaspoon

Kudampuli( Garcinia cambogia) - A Little

Coconut Milk - First Milk

Coconut Milk - Second Milk

Mustard - 1 Teaspoon

Dried red Chillies - 3 no

Curry Leaves - A little

Cocount Oil - 2 Teaspoon


How to Prepare:

The Bitterness is well washed cut into small. Cut the Mango in to small pieces.

Take a clay pot, add chopped bitter gourd, green mango, turmeric powder,  coriander  powder, chilli  powder,  a  cup of  second  coconut  
milk,  salt and cook. If the tamarind is low, add a small piece of  kudampuli.

When the curry is reduced, pour the first coconut milk, stir for a minute and then turn off the stove.

Pour oil in the pan and add mustard when hot. When the mustard starts to crack, add grated chilly and curry leaves and turn off the
stove when it turns light brown. Pour it in to the curry. 

Serve with Rice

Tips:


Put the bitter gourd in a bowl, add some salt and a teaspoon of vinegar, mix well by and leave for 10 minutes. After 10 minutes, squeeze the bitter gourd well. This helps to remove some of the bitterness from it.

  • Tomatoes - 2 No
  • Turmeric Powder - 1/4 Teaspoon
  • Asafoetida Powder (kaayam) - 1/4 Teaspoon
  • Salt - To taste
  • Coriander - 3 Teaspoon
  • Cuminseeds - 1 Teaspoon
  • Pepper - 1/2 Teaspoon
  • Garlic - 7 lbs
  • Tamarind - As needed
  • Coriander leaves -Few
  • Mustard - 1 Teaspoon
  • Dry Red Chilly - 2 No
  • Curry Leaves - Few

How to prepare:

  • In a bowl add two chopped tomatoes, turmeric powder, asafoetida powder(kaayam), salt and tamarind water and bring to a boil.
  • Finely grind the coriander, cumin seeds, and pepper. Add garlic and crush it.
  • Once the tomatoes are well cooked, give them a crush. Put the powdered mixture in it.
  • Once it is boiled add coriander leaves and keep it in the oven. 
  • Add mustard, dry red chilly and curry leaves as seasoning.
  • Very easy and delicious rasam ready.

Ingredients


  • Red Cheera Leaves (Spinach) - 5 cups
  • Coconut (grated) - 1/2 of
  • Green chillies - 3 No
  • Turmeric Powder - 1/2 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Coconut Oil - 3 Teaspoon
  • Garlic Cloves - 4 No
  • Dry red chillies - 2 No
  • Mustard - 1 Teaspoon
  • Salt - As required
  • Curry Leaves - few


Instructions


  • To prepare Kerala Spinach thoran, first wash and clean the spinach leaves thoroughly. When the pan is hot, pour in the oil, add the mustard dry red chilly and spinach.

  • Add coconut, Turmeric powder, Greenchillies,  Cuminseeds, Garlic and Curry Leaves to the spinach, add enough salt and mix well. (Powder without adding water).

  • Cover and Cook on low heat for 1 to 2 minutes.

  • Serve kerala spinach thoran with rice.

The dal and other ingrediants are also cooked in a pressure cooker. After cooking the dal well, season it with ghee. It gives good taste to the dal curry. Dal curry is the simplest and quickest to prepare. You can include dal curry in your daily diet and kids will love it. 


Ingrediants:


Dal - 2 cup
Onion chopped - 1/2
Tomato chopped - 1 No
Green Chillies Finelly Chopped - 4 No
Turmeric Powder - 1/2 Teaspoon
Salt - To taste
CuminSeeds - 1 Teaspoon
Mustard - 1 Teaspoon
Curry Leaves _  1 Teaspoon
Coriander Leaves - Few
Curry Leaves - 1 Stalk
Half sliced onion (for frying)

How to prepare:


In a pressure cooker add dal, onion, tomato,greenchillies, red chilli powder, turmeric powder, and salt and cook. Heat 1 teaspoon ghee in a pan add mustatd seeds, cumin seeds and curry leaves. Then add onion and fry season with boiled dal curry. Dal curry can be mixed well with coriander leaves and served.

Wash all the vegetables thoroughly clean and chopped and set aside. Add salt, pepper powder, and Lemon Juice to the washed chicken, mix well and steam.Put the chopped vegetables, chicken pieces and egg in a bowl, add olive oil, Apple cidar vinegar, salt and pepper powderand mix well. Ingredients

Ayala fish -4 no

Turmeric Powder - ¼ Teaspoon

Chilly Powder - 2 Teaspoon

Pepper Powder - ¼ Teaspoon

Fennel Powder - ¼ Teaspoon

Ginger Paste -¼ Teaspoon

Garlic Paste - ¼ Teaspoon

Small Onion Paste - ¼ Teaspoon

Salt and Oil - For Cooking

Red Chilly Flakes - 1 Teaspoon

Lemon Juice - ½ Teaspoon

Curry Leaves - 4 stalks


How To Prepare:

Add all the powder, salt to taste, lemon juice, ginger and garlic paste and and small onion paste, red chilly flakes mix well and make a paste. Apply this paste and onion paste, mix well and make a paste. Apply this paste on the adjacent pieces and leave it for 30 minutes. It can be kept in the fridge or kept outside. After 30 minutes, heat oil in a pan,add 4 sticks of curry leaves, put fish pieces on it and fry. The curry leaves are placed on the  fish to prevent it from breaking or sticking to the bottom.

Thalassery Biriyani is famous for its taste and aroma. Kaima Rice or Jeerakasala Rice is used for this. It is a small type of rice. Then a special spice and  'Bista' is added to taste. 

Ingrediants for Biriyani Masala:

  1. Fennel Seeds - 1 tsp
  2. Cardamom - 4 pieces
  3. Cloves - 4 pieces
  4. Cinnamon Sticks - Two in One pinch size
  5. Cumin Seeds - 1/4 tsp
  6. Saageera - 1/2 tsp
  7. Pepper Powder - 1 tsp
  8. Nutmug (Jathikka) - 1 small piece
  9. Mace (Jathipathri) - 1 small piece
  10. Star Anise (Thakkolam) - 1 piece
  11. Poppy Seeds (kasakasa) - 1 tsp
  12. Dried Chillies - 2 no 

  • Heat all this together and grind.

Roast Ingredients:

  • Cut two large onions into small pieces.Add a pinch of sugar and fry until golden brown. This is Bista.
  • Roast some cashewnuts and Raisins.

To Prepare the Chicken Masala:

  1. Chicken  - 1 kg
  2. Greenchillies - 7 no
  3. Ginger - 15 gm
  4. Garlic - 30 gm 
  5. Onions - 2 large
  6. Tomatoes - 2
  7. Coriander Leaves - 1/2 cup
  8. Mint Leaves - 1/4 cup
  9. Lemon Juice - 1 tsp
  10. Yogurt - 2 Table spoon

To Prepare it:

  • Finely chop the Greenchillies, Ginger and Garlic.
  • When well cooked, add crushed ginger, green chillies and garlic fry for two minutes.
  • Now add two large spoons of biriyani spice powder and 1/4 teaspoon turmeric powder.
  • Add washed and cleaned chicken pieces and stir for five minutes.
  • Add Tomatoes, Coriander leaves, Mint leaves, and enough salt.
  • Cover the pan and cook until the chicken is cooked through.
  • Stir occasionally.
  • When it is cooked, add yogurt and lemon juice.
  • Thick the gravy and cook open until cooked through.
  • Turnoff the heat and when it heats up slightly, add three-quarters of the bista powder and stir.
  • Now the Masala is ready.

Now lets prepare Biriyani Rice..........Required Ingrediants:

  1. Jeerakasala Rice - 4 cup
  2. Water - 7 cup
  3. Lemon Juice - 1 Teaspoon
  4. Ghee - 2 Tablespoon
  5. Cardamom - 2
  6. Clove - 2
  7. Cinnamon - 1
  8. Salt - To taste

To Prepare It:

  • Wash the rice well and set aside.
  • Pour two tablespoons of Ghee in a bowl and when hot add the Cardamom, Cloves and Cinnamon.
  • When these burst, add rice and fry for two to three minutes.
  • Pour boiling water over it.
  • Add lemon juice and enough salt
  • When it boils well, cover and cook over medium heat until the water dries.
  • Now the Biriyani Rice is also ready.
  • Lets Dum now. For this:
  • Take some Rose Water or Milk, add a little turmeric powder and mix well.
  • In a large bowl add the whole Chicken Masala.
  • Add half Biriyani Rice to it.
  • Sprinkle some Bista, roasted nuts, raisins,some coriander leaves, some biriyani spice powder and some ghee on top.
  • Now add the rest of the biriyani rice layer every thing as before.
  • Now cover well and heat on low heat for ten minutes.
  • Serve after that.....

    Today receipe is a spicy Ayala or Mackerel curry. Different regions of Kerala have their own version of fish curry. This dish makes for perfect combination with the Rice or Kappa(Tapioca). I usually make fish curry with Kudampuli. But in this curry Tamarind is used. It is best to make this in coconut oil and use Kashmiri Chilly Powder, for that a deep red colour. Try this spicy and tasty fish curry. 

Ingredients

1. Ayala or Mackerel - 1 kg  ( Any fish of your choice)
2. Small onion sliced  - 3/4 cup
3. Tomato - 2
4. Ginger Sliced - 2 Teaspoon
5. Garlic crushed - 2 pods
6. Turmeric Powder - 1/4 Teaspoon
7. Kashmiri Chilli Powder - 21/2 Teaspoon
      (Modified according to spice)
8. Coriander Powder - 11/2 Teaspoon
9. Fenugreek Powder - 1/2 Teaspoon
10.Pepper Powder - 1/2 Teaspoon
11.Tamarind - 1 Small lemon size
12.Mustard Seeds - 1/2 Teaspoon
13.Curry Leaves - 2 Springs
14.Green Chilly - 2
15.Coconut Oil - 2 Teaspoon
16.Salt - to taste

    Clean fish and cut in to pieces,slice small onions, crushed ginger and garlic, Shredded green chilly, soak tamarind(valanpuli)in half cup of water and set aside. 

    First added sliced small onions, ginger, garlic, shredded green chilly, curryleaves, tomatoes the spice powders and salt in to a favourite clay pot using you hand mash them and combine well. In to this add tamarind pulp and enough water to cook the fish. Put this on the stove and bring it to a boil. Slide in the fish pieces cover and cook for 15-20 minutes till gravy thicknes and the fish is cooked.

    Heat coconut oil in a pan and add mustard seeds and fenugreek seeds (Uluva). When they splutter add one teaspoon of sliced small onion and curry leaves. When it turns goldern brown drizzle over the curry. Serve with Rice or Kappa(Tapioca).

1. Aloe Vera plup - 2 Tablespoon

2. Lemon Juice   - 1 Teaspoon

How to make Aloe Vera Juice

Step 1

Use a sharp knife and cautiously peel skin of the leaf.

Peel the yellow layer just beneath the rind with a sharp knife and discard

Shed the skin, and remove the yellow layers till you have clear Aloe Vera gel in hand.

Step 4

Add 2 Tablespoon or 30ml of Aloe Vera gel to a blender.

Step 5

Include 1 cup of water and lemon juice, mint leaves and honey.

Step 6

Blend well, serve chilled.

Step 7

Transfer the blended juice into a tumbler and sip on. Also, store it in your flask, so you can have a cup when you feel like it.

Sadhya style kootu curry is delicious,slightly sweet dish that we eat all the specialtime. Anyway, todays how to make sadhya  kootucurry. Let this be the first dish of our Vishudishes.

Ingrediants

1. Peas - 1 cup

2. Elephant Yam cut in to square  - 1 cup

3. Raw Banana cut in to square - 1 cup

4. Shredded Coconut - 1 cup

5. Cumin Seeds - 2 pinches

6. Turmeric Powder - 1/2 Teaspoon

7. Pepper Powder - 2 Teaspoon 

8. Oil-Salt-Mustard - seasoning

9. Black Gram (Urad Dal) - 1 Teaspoon

10. Dry Red Chilly - 3 No

11. Curry Leaves - 1 Stalk

12. Jaggery - 1 Small Piece

13. Shallot - 3  cut in to circles


Preprations

Step 1

    Add groundnuts, a pinch of salt and turmeric powder and bring to boil.

stept 2 

    Cut the ElephantYam and Raw Banana in to small square pieces. 

Step 3

    Remove 5 tablespoons of shredded coconut. Add remaining coconut, cumin seed, and 2 pinches of turmeric powder and grind lightly.

Step 4

    Put the elephant yam and raw banana pieces in the oven and cook with turmeric powder and salt. 

Step 5

    When elephant yam and raw banana are half cooked, add pepper powder and boiled peas, stir and cook covered. 

Step 6

    After cooking add jaggery and stir.

Step 7

    When the water starts to dry well, add salt to taste and mix well.

Step 8

    Heat oil in a pan and add mustard seeds, Black Gram (Urad Dal), dry red chilly and shallots, 5 teaspoon coconut and curry leaves and chop finely.

Step 9

    Once the frying is well done, add one pinch of pepper powder and mix it with the curry. 

Step 10

    So our delicious sadhya special curry is ready.

While it is hot in the cooker stove, pour a teaspoon of oil in it. When the oil heats up, add mustard seeds and when it starts to crack add bengal gram (kadala parippu) and brown it. Peel a squash grate it and add salt to taste. After the whistle is blown add coconut and green chillies, stir well and serve hot.

Finaly chop the washed and cleaned banana leaves. Add crushed coconut, garlic,cumin seed,green chilly and a little turmeric powder. Heat oil in a saucepan and add mustard seeds and grated chillies. Add chopped banana leaves, greated coconut and salt mix well cover and steam.



    ( Change the grated coconut as the number of banana leaves taken increases. Be sure to take young banana leaves as well)
