Instructions:

  1. Marinate chicken (optional):
    Season chicken with salt, pepper, and a little olive oil. Let it rest for 15–20 minutes.

    Heat 2 tbsp olive oil in a pan. Add chicken pieces and cook on medium-high heat until golden brown on both sides. Remove and keep aside.

  3. Prepare the sauce:

    Stir in black and green olives. Add Parmesan cheese if using. Mix and cook for another 2–3 minutes.

  7. Garnish and serve:
    Sprinkle chopped parsley on top.
