  Thalassery Chicken Dum Biriyani Thalassery Biriyani is famous for its taste and aroma. Kaima Rice or Jeerakasala Rice is used for this. It is a small type of rice. Then a special spice and  'Bista' is added to taste.  Ingrediants for Biriyani Masala: Fennel Seeds - 1 tsp Cardamom - 4 pieces Cloves - 4 pieces Cinnamon Sticks - Two in One pinch size Cumin Seeds - 1/4 tsp Saageera - 1/2 tsp Pepper Powder - 1 tsp Nutmug (Jathikka) - 1 small piece Mace (Jathipathri) - 1 small piece Star Anise (Thakkolam) - 1 piece Poppy Seeds (kasakasa) - 1 tsp Dried Chillies - 2 no  Heat all this together and grind. Roast Ingredients: Cut two large onions into small pieces.Add a pinch of sugar and fry until golden brown. This is Bista. Roast some cashewnuts and Raisins.
